Gazpacho Garden Salad Recipe

  • 4 large tomatoes, cubed
  • 1 large cucumber, chopped
  • 1 cup chopped red onion
  • 1 cup chopped green pepper
  • 1/3 cup minced fresh basil or parsley
  • 1/3 cup cider vinegar
  • 1 tablespoon olive or canola oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sugar


  • 1. In a large bowl, combine the first five ingredients. In a small bowl, whisk the dressing ingredients. Pour over vegetables and toss to coat. Cover and chill for at least 1 hour. Yield: 12 servings.
