Garlic Lime Salmon Recipe

This moist and tender fish is lightly seasoned, so leftovers work well in other recipes. —Gail Uchwat, Sand Springs, Oklahoma
TOTAL TIME: Prep/Total Time: 30 min. YIELD:8 servings


  • 1/2 cup canola oil
  • 1 medium onion, finely chopped
  • 1 teaspoon grated lime peel
  • 2 tablespoons lime juice
  • 1 garlic clove, minced
  • 2 salmon fillets (about 1-1/2 pounds each)


  • 1. Preheat broiler. In a small bowl, mix the first five ingredients. Place salmon fillets on a broiler pan, skin side down. Broil 4-6 in. from heat 15-20 minutes or until fish just begins to flake easily with a fork. Brush frequently with onion mixture during the last 5 minutes of cooking. Yield: 8 servings.

"I made this before and it was a fine idea of seasonings. To make the seasoning a little stronger, I only used 1/4 cup canola oil (I used olive oil just cause I do for fish). While salmon needs to stay moist while cooking I didn't feel it needed so much oil."
