Fudge-Nut Oatmeal Bars

Writes Kim Stoller of Smithville, Ohio, "When I make these bars for lunches and snacks, they're gone in a jiffy!"
  • Total Time
Prep: 20 min. Bake: 20 min.
  • Makes
    2-1/2 dozen

  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups quick-cooking oats
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups semisweet chocolate chips
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 2 teaspoons vanilla extract

  • In a bowl, cream butter and brown sugar until light and fluffy. Add eggs and vanilla; mix well. Combine oats, flour, baking soda and salt; add to the creamed mixture. Spread two-thirds into an ungreased 15x10x1-in. baking pan; set aside.
  • For filling, heat the milk, chocolate chips, butter and salt in a microwave-safe bowl until chips are melted. Remove from the heat; stir in walnuts and vanilla. Spread over top. Drop remaining oat mixture by tablespoonfuls over chocolate.
  • Bake at 350° for 20 to 25 minutes. Cool on a wire rack.

These bars are delicious - but don't attempt to make them if you're in a hurry as I find them a bit time consuming. And I spread a bit more than two-thirds of the mixture for the base, using less than a third for the topping and dropping in smaller spoonsful. They are an infrequent treat and worth the effort!

Very Good. Used a 9x13 pan. They are very close to a product that was sold at the small grocery store where I worked. They were made by a young lady and everyone raved over them. I made them to take to the staff at the local restaurant where my husband and I eat regularly as a Valentine treat.

Very yummy! It's almost like a chocolate chip cookie with a fudgy filling in the middle.
