Fruit Skewers with Ginger Dip Recipe
“A friend shared this refreshing recipe with us and my husband and I thought it was simply delicious,” writes Cindy Winter-Hartley from Apex, North Carolina. Laced with lime, ginger and honey, the creamy dip is great all year-round.
- 2/3 cup reduced-fat spreadable strawberry cream cheese
- 2/3 cup reduced-fat sour cream
- 1/4 cup lime juice
- 3 tablespoons honey
- 1/2 teaspoon ground ginger
- 2 cups green grapes
- 2 cups fresh or canned unsweetened pineapple chunks
- 2 large red apples, cut into 1-inch pieces
- 1. For dip, in a small mixing bowl, beat cream cheese and sour cream until smooth. Add the lime juice, honey and ginger; mix well. Cover and refrigerate for at least 1 hour.
- 2. On eight 12-in. skewers, alternately thread the grapes, pineapple and apples. Serve immediately with dip. Yield: 8 skewers (1-1/2 cups dip).
