Frosty Lemon-Strawberry Dessert
Total TimePrep: 15 min. + freezing
- 1 quart fresh strawberries, hulled
- 1/2 gallon vanilla ice cream, softened
- 1 can (12 ounces) frozen lemonade concentrate, thawed
- 2 teaspoons grated lemon peel
- Place strawberries in a food processor; cover and process until pureed. Transfer to a large bowl; add the ice cream, lemonade concentrate and lemon peel. Beat until blended.
- Pour into an ungreased 13x9-in. dish. Cover and freeze overnight. Remove from the freezer 15 minutes before serving.

To keep it on the more heathy side we added frozen yogurt instead of ice cream and reduced the lemonade.

I used frozen yogurt instead of the icecream. It was good, but I have better icecream desserts and summer treats recipes. I probably would not make it again.

I THINK I'LL MAKE IT NEXT TIME REPLACING ICE CREAM WITH LOW-SUGAR WHIPPED TOPPING AND 1/2 CAN OF LEMONADE TO MAKE IT MORE DIABETIC FRIENDLY

This was great, had rave reviews. As always I never follow the recipe exactly but adjust it to match our taste. This will be a future favorite for sure!!!

My 9-year-old granddaughter and I made this for company this past weekend. It came out very good -- the weather was uncomfortably hot but this treat was just the refreshing dessert we needed. I used thawed frozen strawberries (whole unsweetened ones I had frozen myself last year) instead of fresh ones and it worked perfectly. I didn't have any fresh strawberries to use as a garnish the first time I served this, so used some real whipped cream instead. The second time I served it (to different guests) I used the whipped cream and topped with 3 or 4 fresh strawberries. Everyone enjoyed this dessert. My husband thought it was a little bit nicer if it thawed for 15 minutes before serving, rather than the 10 minutes suggested in the recipe.

Yummy!! Was a little tart. I think the sweetness is dependent on the fresh berries. Next time I will add a little sugar.

I made this for my Persian friends and family and they said that it tasted like a Persian treat called "Alaska".

I used 1/2 qt. bag frozen blueberries and 1/2 qt. bag frozen raspberries. Everything else was the same. Was very easy and quick to make and tasted great. Served it with whipped cream and cookies.
