Frosted Anise Sugar Cookies Recipe

These soft, cake-like cookies have a pleasant anise flavor that's distinct but not overpowering. I add red and green sprinkles for Christmas, but you could decorate them to suit any occasion.—Janice Eanni, Willowick, Ohio

Ingredients

  • 1 cup butter, softened
  • 1-1/2 cups sugar
  • 6 eggs
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon anise extract
  • 3-1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • ICING:
  • 4 cups confectioners' sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 to 4 tablespoons milk
  • Colored sprinkles, optional

Directions

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and extracts. Combine flour and baking powder; gradually add to creamed mixture and mix well.
  • 2. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool completely.
  • 3. For icing, in a large bowl, combine the confectioners' sugar, butter, vanilla, and enough milk to achieve spreading consistency. Frost cookies; place on waxed paper. Decorate with sprinkles if desired; let stand until set. Store in an airtight container. Yield: 7 dozen.

"This is a delightful change from the usual crispy, loaded with something cookie.

The cake like texture makes it special. The anise extract makes it great.
For those who don't like anise flavoring, I think orange, lemon, or vanilla extract would be
perfect, though I would make the icing for vanilla cookie flavored.
I didn't make icing to frost the cookie. I made a simple glaze and spoon drizzled it over them, then sprinkled colored sugar on top."
