TOTAL TIME: Prep: 10 min. Cook: 45 min. YIELD:6 servings


  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 broiler/fryer chicken (2-1/2 to 3 pounds), cut up
  • Shortening


  • 1. In a bowl, combine first four ingredients. Wash and dry chicken; coat pieces in flour mixture. In a skillet, melt shortening to 1/2-in. depth over medium-high heat. Fry chicken (in batches if necessary) in hot shortening until golden brown on all sides. Return all chicken to pan; cover and cook over low heat until chicken is done, about 30 minutes. Yield: about 8 servings.

"This is the way I was taught to fry chicken when I was a child. Of course back then, we put it into a brown paper bag and shook to coat. Then drained the cooked chicken onto another brown paper bag. Delicious every time!"
