Feta Shrimp Skillet Recipe

Feta Shrimp Skillet Recipe

On our honeymoon in Greece, my husband and I had a dish like this one. I tried to re-create the flavors in this recipe when we got home. When I make it now, it brings back such wonderful memories. —Sonali Ruder, New York, New York
TOTAL TIME: Prep/Total Time: 30 min. YIELD:4 servings

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained
  • 1/4 cup white wine, optional
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 tablespoons minced fresh parsley
  • 3/4 cup crumbled feta cheese

  • 1. In a large nonstick skillet, heat oil over medium-high heat. Add onion; cook and stir 4-6 minutes or until tender. Add garlic and seasonings; cook 1 minute longer. Stir in tomatoes and, if desired, wine. Bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes or until sauce is slightly thickened.
  • 2. Add shrimp and parsley; cook 5-6 minutes or until shrimp turn pink, stirring occasionally. Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is softened. Yield: 4 servings.

Recipe Note

Test Kitchen Tips

  • For even more Mediterranean flavor, try adding 1/4 cup of chopped kalamata olives wiith the tomatoes.
  • This saucy dish is great served over rice or pasta. Zucchini noodles and spaghetti squash also make delicious bases, and are low-carb, too.
  • Like it spicy? Try adding a pinch of crushed red pepper with your other seasonings.

I used stewed tomatoes, cooking white wine, Italian blend of herbs and minced garlic that comes in a jar. It was spectacular! Very simple to make and not time consuming at all. I sat on my screened in porch and it was like eating at a gourmet restaurant in Greece! LOL May there be many happy days ahead for you and your husband! Thank you so much for this recipe, Sonali! 5-STARS!"

I did think it needed pasta or something to soak up the liquid, but the combination of flavors was great and every bite just exploded. Will definitely make this again. (But will NOT use peel yourself shrimp!)"

"I love this recipe. My only change was I spooned the tomato and shrimp mixture into 2 small personal casserole dishes, piled the feta on top and stuck them under the broiler until the feta softened and browned a bit. Served with Greek salad, crusty bread, white wine and Greek music playing softly in the background. Perfect for date night with hubby!"

I also used pre-cooked shrimp, so I followed the total cooking time but only added the shrimp during the last minute and heated them through. The tang of the feta really makes this recipe!
