Great chicken salad recipe! I made as directed, except I omitted the olives....just a personal preference. I had alot of leftover baked chicken breasts in the fridge, and this was a good way to use them up. And since I used more chicken than called for, I increased the other ingredients accordingly. The thing we loved about this recipe is that it's basically a classic chicken salad, which is what we prefer. The dill pickle is a nice change of pace from the usual sweet relish. Since my family loves to snack on chicken salad, this will be in my fridge often!
I doubled the recipe and added 2 hard boiled eggs. I used MSG (Accent) instead of salt , as we are looking to cut down on sodium and MSG just makes everything taste better.
We prefer the old fashioned type of chicken salad and this fits the bill. I thought it might be too bland after reading the ingredients but it was very good except a bit salty for us. It's perfect for using up leftover chicken.
