Ingredients
- STRAWBERRY MOUSSE:
- 10 fresh strawberries, hulled, plus 6 fresh strawberries, divided
- 1 teaspoon vanilla bean paste or extract
- 1 package (8 ounces) cream cheese, softened
- 3/4 cup plain Greek yogurt
- 3/4 cup confectioners' sugar
- 4 whole graham crackers, crushed
- WHIPPED CREAM:
- 1 cup heavy whipping cream
- 1/2 teaspoon vanilla bean paste
- 3 to 4 tablespoons confectioners' sugar
Directions
- Add 10 strawberries and 1 teaspoon vanilla to a blender or food processor; process until smooth. Add cream cheese, Greek yogurt and confectioners' sugar. Mix until smooth.
- Press 1-2 tablespoons crushed graham crackers into the bottom of six jars. Thinly slice 6 strawberries. Arrange strawberry slices around the glass wall of each jar.
- Spoon or pipe strawberry mousse into jars. Cover and refrigerate until set, at least 3 hours or overnight.
- Just before serving, in a large bowl, beat the heavy whipping cream until it begins to thicken. Add vanilla bean paste and confectioners' sugar. Beat until stiff peaks form. Pipe over chilled mousse cups. Garnish with additional crushed graham crackers, sliced strawberries or fresh mint leaves.
