Effortless Eggnog

This easy eggnog offers delicious traditional flavor without any eggs! There’s no food safely worry about raw eggs, and anyone with egg allergies can enjoy this mixture. It’s also good “spiked,” if you are so inclined. —Paula Zsiray, Logan, Utah

Ingredients

  • 1/2 gallon cold milk, divided
  • 1 package (3.4 ounces) instant French vanilla pudding mix
  • 1/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Directions

  • In a large bowl, whisk 3/4 cup milk and pudding mix until smooth. Whisk in the sugar, vanilla, cinnamon and nutmeg. Stir in the remaining milk. Refrigerate until serving.

    This recipe is amazing! I am eggnog obsessed (no matter what time of year it is), but sometimes I don't have the time or energy to make a batch of traditional of eggnog to satiate my craving. I usually omit the cinnamon and just use freshly grated nutmeg. Thank you Paula for sharing this delicious concoction!

    Very easy and flavor was good. However consistency was much thinner than traditional egg nog. May try this again with whole milk.

    I have been making this for several years. I don't eat eggs but happen to like Eggnog. This was a great alternative. I use Sugar Free Pudding, Xylitol and 1/2&1/2.

    As written, the recipe has an eggnog sort of flavor, but it lacks the richness and full breadth of flavor of the real thing. I would never make it again. However, if you double the nutmeg, double the sugar, and replace 1 cup of milk with 1 cup of heavy cream.... *that* is something I will make again and again.

    When store bought Eggnog became too expensive, I looked through my old Taste of Home issues to find this. It is so much better than the store bought, I wish I had made it before! And healthier too - use organic milk! We will definately use this again and again!

    I have been making this eggnog recipe for several years now and wouldn't make it any other way. It's the best (mock) eggnog recipe I have ever had. I just couldn't make eggnog with eggs and thought that this would be easier and it sure was. It has now become a family favorite.

    I don't eat egg or dairy, and soy nog is so expensive and hard to find. This recipe saved my holidays! I used a dairy-free instant pudding and soymilk, and it tasted delicious. I don't know how it compares to real eggnog, but with a shot of rum in it, I'd say this is a pretty satisfying holiday drink on it's own. And I've found it tastes good in tea ;)
