Easy Grilled Salmon Salad

Ingredients

4 salmon fillets (4 ounces each)

2 garlic cloves, minced

1/2 cup teriyaki sauce

1 package (10 ounces) hearts of romaine salad mix

1 medium cucumber, sliced
-
1 pint cherry or grape tomatoes, halved

1/2 medium red onion, thinly sliced

Salad dressing of your choice

Optional: Crumbled feta cheese, fresh dill and lemon slices
Directions

Rub salmon with garlic; place in a shallow bowl. Add teriyaki sauce; turn salmon to coat. Let stand 10 minutes.

Place salmon on an oiled grill rack. Grill salmon, covered, over medium-high heat or broil 3-4 in. from heat until fish just begins to flake easily with a fork, 4-5 min on each side.

Toss salad mix, cucumber, tomatoes and onion with salad dressing; place on four salad plates. Top with salmon and desired toppings.
