- 2 tablespoons brown sugar
- 2 tablespoons butter
- 1 tablespoon lemon juice
- 2 teaspoons soy sauce
- 1 teaspoon minced garlic
- 1/2 teaspoon pepper
- 4 halibut steaks (5 ounces each)
- In a small saucepan, combine the first six ingredients. Cook and stir until butter is melted. Remove from the heat; set aside.
- Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill halibut, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until fish flakes easily with a fork, basting frequently with butter mixture. Yield: 4 servings.
