Easy Fish Fillets

- 3/4 cup seasoned bread crumbs
- 1/3 cup reduced-fat Italian salad dressing
- 4 catfish fillets (5 ounces each), patted dry
- Place bread crumbs in a shallow bowl. Place dressing in another shallow bowl. Dip fish in dressing, then coat with crumbs. Place fish on a rack in a 15x10x1-in. baking pan. Bake uncovered, at 450° for 15-20 minutes or until the fish flakes easily with a fork.

Very tasty! I used part panko crumbs and part italian bread crumbs to get a little crispier crust. I also sprayed it with a little cooking spray.

This recipe was quick, easy and tasty. I?m defiantly going to put this into my favorites for weeknight meals. The only changes I made was that I didn?t have seasoned bread crumbs so I just added some Italian seasoning to my plain ones and it was delicious. Perfect recipe for the busy mom :)
