Dumpling-Topped Cherries

Ingredients

  • 4 cans (14-1/2 ounces each ) pitted tart cherries
  • 1-1/2 cups sugar
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup amaretto
  • DUMPLINGS:
  • 1-1/2 cups all-purpose flour
  • 6 tablespoons sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon salt
  • 1/2 cup 2% milk
  • 5 tablespoons butter, melted
  • Vanilla ice cream, optional

Directions

  • Drain cherries, reserving 1/2 cup juice. Place cherries in inner pot of large multi-cooker. In a small bowl, mix sugar, cornstarch and salt; stir in reserved 1/2 cup juice until smooth. Stir into cherries. Cover with glass lid. Press slow cook function; select vegetables setting. Press timer; set to 3 hours. Start.
  • Stir amaretto into cherry mixture. For dumplings, in a small bowl, whisk flour, sugar, baking powder, lemon zest and salt. In another bowl, whisk milk and melted butter. Add to flour mixture; stir just until moistened. Drop by tablespoonfuls on top of hot cherry mixture. Cover with glass lid. Press slow cook function; select vegetables setting. Press timer; set to 1 hour. Start.
  • Remove glass lid; close air frying lid. Press air fry function; select bake setting. Press timer; set to 10 minutes. Start. Cook until lightly browned. If desired, serve warm with ice cream.

    Super easy to make and very adaptable . I used fresh blueberries. I sprinkled the top with some cinnamon for an extra spice taste . Next time I will add some chopped pecans to the topping .
