Diploma Sandwiches Recipe

Diploma Sandwiches Recipe

Fun for a graduate's party, these easy sandwiches can be made ahead and chilled. Thinly sliced ham, turkey, beef and cheese are other options for the filling. I've also used halves of 6-inch tortillas to make smaller "diplomas." —Sue Ross, Casa Grande, Arizona
TOTAL TIME: Prep/Total Time: 30 min. YIELD:22 servings

  • 1 loaf (16 ounces) thin white sandwich bread, crusts removed

"I love this idea. I used chopped chicken and cream cheese mixed together, instead of chicken salad already prepared."

"For a vegetarian filling, I used cream cheese mixed with finely diced carrots, celery, onion, red & green peppers, chives, and parsley. I also used flour tortillas rather than bread, and just trimmed the edges. They were the hit of the party!"
