- 4 medium pears, peeled, halved and cored
- 1/4 cup cranberry juice
- 1/4 cup strawberry preserves
- 1/2 teaspoon vanilla extract
- 1. Place pear halves in an 11x7-in. dish. In a small bowl, mix the cranberry juice, preserves and vanilla until blended; pour over pears. Microwave, covered, on high for 7-9 minutes or until pears are tender.

I made this when unexpected guests showed up one night, and I had nothing for dessert. I had no strawberry so used raspberry and served it with vanilla ice cream on the side. Everyone loved it. I will definitely make this again.
