- 1 cup chopped celery
- 1 cup chopped onion
- 1 teaspoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon curry powder
- 1-1/2 cups cooked barley
- 1/4 cup slivered almonds, toasted
- 1/4 cup raisins
- 1/4 cup minced fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- In a large skillet, saute celery and onion in oil for 8-10 minutes or until crisp-tender. Add the garlic and curry; saute for 1 minute. Warm barley in the microwave; stir into skillet. Add the remaining ingredients; cook and stir until heated through. Yield: 4 servings.
