Cucumbers in Cream
"WE HAD an enormous vegetable garden, so we enjoyed freshly picked cucumbers in summer. After the cucumber were sliced and soaked awhile in salt water. Mother added thick cream, which she carefully scooped from the top of some fresh milk."

Very close to my Mom’s recipe. I used white instead of cider vinegar. Only soaked the cukes and salt water. I don’t like the bitter liquid that sweats out so I add the onion later. Also added a bit of ground black pepper to taste. Mmmmm so good and fresh in the summer.
Very good and easy to make. I made as directed except that I added some pepper to the mixture and we all enjoyed it. Next time I think I would use light cream but again this is very good as written.
I made this recipe for Book Club and there wasn't a drop left and everyone wanted the recipe. I was so proud because the cukes were from my garden.
I am not a fan of plain cucumbers but really liked this recipe. I will definitely make it again. It was a tasty change and fun to serve guests at a summer barbeque.
