I serve this refreshing and simple salad year-round because it perks up everyday meals. I think what makes it so special is the addition of dill.

Ingredients

  • 1/2 cup sour cream
  • 2 teaspoons sugar
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon dill weed
  • 4 medium cucumbers, sliced

Directions

In a large bowl, combine sour cream, sugar, vinegar, salt and dill. Add cucumbers; toss to coat. Chill for at least 30 minutes. Yield: 8-10 servings.

"Great recipe! I have made this many times this summer using all of my garden fresh cucumbers. I do prefer to use apple cider vinegar for a little extra flavor."

"I made this today and it was very good and very refreshing.

I seasoned and mixed the sliced cucumbers first with the sugar, salt and Dill weed (I used Dried Dill weed ) as this allowed the seasonings to totally coat the cucumbers . I added the sour cream (I used Reduced Fat Daisy Brand Sour Cream) and vinegar last then mixed it again gently .
I like to slice the cucumbers very thin as thay pick up more flavor .
If desired thin slices of Vidalia Onion are also a nice addition.

"This is a great cucumber salad. I add a thinly sliced vidalia onion and often double it when I have an abundance of home grown cucumbers...it lasts for day in the fridge..try it you might enjoy it as much as we do."
