Crustless Spinach Quiche
Total TimePrep: 25 min. Bake: 40 min.
- 1 cup chopped onion
- 1 cup sliced fresh mushrooms
- 1 tablespoon vegetable oil
- 1 package (10 ounces) frozen chopped spinach, thawed and well drained
- 2/3 cup finely chopped fully cooked ham
- 5 large eggs
- 3 cups shredded Muenster or Monterey Jack cheese
- 1/8 teaspoon pepper
- In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 350° for 40-45 minutes or until a knife inserted in center comes out clean.

Love this recipe. I substitute the frozen spinach fir fresh and sauté it with the rest of the vegetables. I also add cut grape tomatoes.

I thought the egg mixture was too thick, so I added another seven (!) eggs, a couple of splashes of skim milk and fat-free half and half, and divided it into two pie plates. I don't know what it would be like as originally written, but it was really good the way I altered it!

I made this tonight. Oh. My. Goodness. I didn't have time to shop, so I used a few previous reviewer's suggestions. I used fresh baby spinach instead of frozen, I used one cup of Monterey Jack cheese, and two cups of pepper jack cheese. I substituted 6 slices of bacon (chopped and cooked) for the ham. When I told my husband we were having crustless quiche for dinner, his face just fell. "We are?", he asked with great disappointment. Then. he tasted it. We both absolutely LOVED it! I had a slice, but he ate the rest of it! The pepper jack cheese was the perfect amount of heat and flavor and the vegetables blended beautifully. It has been a very long time since I tried a new recipe and didn't start finding fault with it the minute I tasted it. This was absolutely DELICIOUS and looked EXACTLY like your picture. I can't wait to WOW guests with this incredibly impressive and tasty new dish!

Added fresh baby spinach, and frozen chopped, canned artichoke hearts, leeks from the garden and sauteed those. Used gouda and parm cheese with my fresh eggs. Made 2, used 8 eggs in each pan. Large family. Cost me nothing, had all ingredients. Added some Adobe seasoning. Used half a pound of bacon chopped and cooked.

This was delicious. I used fresh spinach, sharp cheddar with asagio and rosemary, 6 eggs, and some pico. Wow. I was told it was the best quiche they had ever eaten. Yummy.

Best Quiche I've ever made. Only addition I had was added 1 cup of pepper jack cheese and 2 cups of the monterey jack cheese. Many happy people for brunch expressed how tasty and light it was . Turned out exactly like your picture. I enjoy your website and have made several of your recipes over the years. Thanks for the great site. Keep up the great job. Will make they as my main quiche recipe from now on.

Love the amount of spinach but I used fresh and steamed it down; only change I made was using pepper jack cheese. Came out perfectly.

Very yummy! I used red peppers instead of mushrooms as that is what I had on hand. My husband even liked it and he does not care for quiche, I think because there is no crust. Will make again!
