Crunchy Apple Muffins

"I enjoy baking muffins--especially when they feature healthy ingredients like these do," says Elaine Anderson of Aliquippa, Pennsylvania. The crunchy topping and juicy apple bits add just the right sweetness to these jumbo muffins.

I used this recipe to make 36 mini-muffins, and they were a big hit!! After they cooled, I drizzled on a glaze made from 1/2 cup powdered sugar, 2 Tablespoons pure maple syrup and 1/2 teaspoon water. Will definitely be making these again!

I made this recipe without the topping and put it in mini muffin pan. Definitely enjoyed it. Will try it with the topping the next time.
