Crunchy Apple Muffins
Total TimePrep: 15 min. Bake: 20 min. + cooling
I used this recipe to make 36 mini-muffins, and they were a big hit!! After they cooled, I drizzled on a glaze made from 1/2 cup powdered sugar, 2 Tablespoons pure maple syrup and 1/2 teaspoon water. Will definitely be making these again!
I made this recipe without the topping and put it in mini muffin pan. Definitely enjoyed it. Will try it with the topping the next time.
My boyfriend is diabetic and loves these muffins so much we had to make extra to take to other diabetics at church!
