Crumb-Coated Cube Steaks

Ingredients

  • 1 large egg
  • 1/2 cup milk
  • 3/4 cup crushed saltines (about 25 crackers)
  • 2/3 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 4 beef cube steaks (4 ounces each)
  • 3 tablespoons canola oil
  • GRAVY:
  • 2 tablespoons all-purpose flour
  • 1-1/3 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • 1. In a shallow bowl, whisk egg and milk. In another shallow bowl, combine cracker crumbs, flour, salt, baking powder, cayenne and pepper. Dip steaks into egg mixture, then into crumb mixture.
  • 2. In a large skillet, cook steaks in oil over medium heat for 3-4 minutes on each side or until no longer pink. Remove and keep warm.
  • 3. For gravy, stir flour into pan until blended. Gradually add milk, stirring to loosen browned bits from pan. Bring to a boil; cook and stir 2 minutes or until thickened. Season with salt and pepper. Serve with steaks.
