Creamy Pesto Chicken

The humble chicken breast cooks up to creamy goodness in a sauce of pesto, cream and tomatoes for a quick and easy weeknight main dish. Parmesan adds an extra flavor note.
Ingredients

4 boneless skinless chicken breast halves (6 ounces each)

1/8 teaspoon salt

1/8 teaspoon pepper

1 tablespoon olive oil

2 garlic cloves, minced

2 cups grape tomatoes, halved

3/4 cup heavy whipping cream

1/2 cup prepared pesto

1/2 cup shredded Parmesan cheese

Pound chicken breasts with a meat mallet to 1/2-inch thickness; sprinkle with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides; remove and keep warm.

In the same skillet, add garlic. Cook and stir until fragrant, about 1 minute. Stir in tomatoes, cream and pesto. Bring to a boil; reduce heat. Return chicken to pan; cover and cook until a thermometer reads 165°. Top with Parmesan; serve immediately.
