Creamy Beef & Potatoes

One of my husband's favorite childhood memories was eating his Grandma Barney's Tater Tot Casserole. It's just as much fun making with O'Brien potatoes, too. — Heather Matthews, Keller, Texas

Ingredients

  • 4 cups frozen O'Brien potatoes
  • 1 tablespoon water
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
  • 2/3 cup 2% milk
  • 2 cups shredded Colby-Monterey Jack cheese

Directions

  • Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high until tender, 8-10 minutes, stirring twice.
  • Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain. Stir in salt and pepper. In a small bowl, whisk soup and milk until blended; add to beef. Stir in potatoes. Sprinkle with cheese. Reduce heat to low; cook, covered, until cheese is melted.

    I made this tonight, we loved it. I did not have frozen potatoes so I boiled diced potatoes. It was delicious.

    I would rate 0 stars if I could. I tried to make this and it failed miserabely. Way to much salt was called for, and it was like pasty glue. SO DISGUSTING. I threw it out after the first bite. My advice, never eat this dish.

    This is a good, quick recipe that you can alter to fit your tastes. Reading the ingredients, I knew I would need more seasoning. I cooked the potatoes on the stovetop to give them some texture seasoning them with garlic powder, onion powder and seasoned salt. I added some chipotle garlic seasoning to the burger when cooking it and I only used one can of soup. This turned out very tasty and I would definitely make it again if I need a fast weeknight supper.

    If negative stars were an option that's what I would give this... I try to be positive about most recipes as you cant account for personal taste. But this is GROSS. I almost feel sorry for someone who's childhood involved this dish.

    Truly bizarre, gummy, almost like glue, casserole. More like a hash or chowder than a...what is it, exactly? It tasted fine, just not enough to make it again, and besides the calorie and fat contest are out of this world. Meh.

    This was ok. VERY bland. Added pepper to it at the table,too. Added peas and carrots while cooking. Doubt that I'd make it again.

    This was very good...I followed the directions, but then assembled in the slow cooker to keep warm. I also added mushrooms! YUM!

    Um ... no. I think that microwaving the potatoes kinda made its texture a little weird. I like the crunchiness of potatoes like this and microwaving them kinda took that away. it was a huge disappointment.

    quick and easy, plus I added a can of mixed veggies. I will probably add some extra spices next time, but overall, I liked this recipe.
