Ingredients

  • 1 pound ground beef
  • 2 uncooked bacon strips, diced
  • 1 teaspoon minced onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • TOMATO GRAVY:
  • 2 tablespoons chopped green pepper
  • 1 tablespoon chopped onion
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 to 2 bay leaves
  • 1 teaspoon sugar
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup water
  • 2 tablespoons all-purpose flour

Directions

In a bowl, combine beef, bacon, onion, salt and pepper. Shape into four oval patties; brown in a skillet over medium heat. Remove patties and keep warm. Drain all but 1 tablespoon drippings; saute green pepper and onion in drippings until tender. Add tomatoes, bay leaves, sugar, celery salt, salt and pepper. Combine water and flour until smooth; add to tomato mixture, stirring constantly. Bring to a boil; cook and stir for 2 minutes. Return patties to gravy. Reduce heat; cover and simmer for 30 minutes. Uncover and simmer 10 minutes longer. Remove the bay leaves. Yield: 4 servings.
