Being from the South, I've always enjoyed sweet potatoes as standard fare. I'm always looking for new ways to prepare sweet potatoes, and this recipe is my favorite. The topping provides a crunchy delightful contrast to the consistency of the mashed sweet potatoes.

Ingredients

  • 2 eggs
  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • TOPPING:
  • 3 cups cornflakes
  • 2/3 cup butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup chopped nuts
  • 1/2 cup raisins

Directions

In large bowl, beat eggs. Add next five ingredients; mix well. Spoon into ungreased 13-in. x 9-in. baking dish. Combine topping ingredients; sprinkle over potatoes. Bake at 350° for 30-40 minutes. Yield: 6-8 servings.

"I cut sugar to 1/2 c in the potato mixture and it was sweet enough. Also I did not have cornflakes, but had honeybunches of oats as a substitute, really good."

"My favorite - the only time I really indulge. I make it with Splenda and Splenda Brown Sugar - still GREAT! (However I never use the amount of butter they suggest - especially for the topping, a couple of tablespoons at most - never 2/3 cup)"

"I agree that this is a fabulous recipe. Two substitutions to try are (1) Craisins instead of raisins, and (2) crumbled ginger snaps instead of corn flakes. If you have access to a Trader Joe's grocery, use their Triple Ginger Snaps for which they are famous. For an extra "kick" , add some brandy to potato mixture!"
