Cornbread Squares

This inexpensive cornbread will disappear as fast as you can make it. It is always fluffy and moist. —Marcia Salisbury, Waukesha, Wisconsin

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup 2% milk
  • 2 large eggs, lightly beaten, room temperature
  • 1/4 cup canola oil

Directions

  • 1. Preheat oven to 400°. In a large bowl, combine flour, cornmeal, sugar, baking powder and salt. Stir in milk, eggs and oil just until moistened.
  • 2. Spoon into a greased 8-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes.
