  • Bittersweet chocolate: We like to use a bittersweet type of baking chocolate for brownies. It’s sweet without being too sweet, allowing the cocoa flavor to really shine.

Directions

To make the cookie dough, whisk together the flour, baking soda and salt in a medium bowl and set aside.

Next, in the bowl of a stand mixer fitted with a paddle attachment, cream together the butter, brown sugar and granulated sugar until they’re fluffy and lightened in color, about five minutes. Beat in the egg and the vanilla extract. Add the flour mixture to the wet ingredients and stir until just combined. Then, fold in the chocolate chips. Cover the dough with storage wrap and chill it until you’re ready to use.

Step 2: Melt the chocolate with butter, sugar and oil

To prepare the brownie batter, fill the bottom of a double boiler with a few inches of water and bring it to a low simmer. To the top of the double boiler, add the chopped chocolate, brown sugar, granulated sugar and oil. Stir occasionally until the chocolate is melted and the sugars have mostly dissolved. Remove it from the heat. Beat in the eggs, one at a time, until the batter is smooth and glossy, then beat in the vanilla.

Step 3: Add the dry ingredients
