Cool and Creamy Watermelon Pie Recipe

This simple pie is so refreshing that it never lasts long on warm summer days. Watermelon and a few convenience items make it a delightful dessert that doesn't take much effort. —Velma Beck, Carlinville, Illinois
TOTAL TIME: Prep: 15 min. + chilling YIELD:6-8 servings


  • 1 package (3 ounces) watermelon gelatin
  • 1/4 cup boiling water
  • 1 carton (12 ounces) frozen whipped topping, thawed
  • 2 cups cubed seeded watermelon
  • 1 graham cracker crust (9 inches)


  • 1. In a large bowl, dissolve gelatin in boiling water. Cool to room temperature. Whisk in whipped topping; fold in watermelon. Spoon into crust. Refrigerate for 2 hours or until set. Yield: 6-8 servings.

  • If you want an extra-thick layer of graham-tastic crust, it's as easy as 1-2-3 to make your own: 1. Mix 1-1/2 cups graham cracker crumbs with 1/4 cup sugar and 1/3 cup melted butter. 2. Press into a pie plate. 3. Bake at 375 degrees until set, 8-10 minutes. Make sure to cool before filling.

    "Very good summertime dessert. I cut watermelon and put on paper towels in colander while I made rest of pie. I had one problem and that was the jello did not dissolve well with only 1/4 cup of boiling water. It stuck to the bowl and spoon. Any answers to this?"

    "Make you drain the watermelon WELL after dicing it. Place it into a colander to be sure all the extra juice is gone.

    Another important thing is to be SURE to cool the gelatin down completely before adding in your whipped topping or all you will get is SLUSH!
    The BEST gelatin to use, imo, is Jolly Rancher watermelon! It has the best flavor for this pie!
    This is a simple recipe that turns out WELL if you follow directions and will absolutely THRIL watermelon lovers in your family! It's delicious!"

    "This is the BEST pie ever for hot days of Summer. Followed the recipe exactly except used reduced fat graham cracker crust & light cool whip (dietary restrictions). Found the watermelon jello at Walmart, as other markets didn't carry it. It stayed in the fridge for a good 4 days. This is a keeper in my recipe file!

    "I made this and while it tasted delicious, it didn't set up as well as it should have. Maybe the heat??? I will try it again though because the flavor is so good and we always seem to have portions of watermelon left over after cutting into one.     "This pie is delicious, I can't get enough of it. A friend brought a pie to work. She used cherry jello. We liked it so much the next day she brought two, one with watermelon jello and one made with strawberry jello. My favorite is actually the one with cherry jello. It has more flavor and is a darker pink than the watermelon jellon. Don't be afraid to make it with a different flavor jello. Today I made one to take to a family reunion. I also made one with orange jello and mandarin oranges. I'm going to call that Mandarin pie."
