Zucchini Crusted Pizza

TOTAL TIME: Prep: 10 min. Cook: 60 min. YIELD: 4 servings
Great flavor, nutritious, versatile, easy to freeze and make ahead, fun to make with kids, quadruples nicely...what's not to like?

Ingredients

olive oil and flour for the pan
2 cups (packed) grated zucchini (yellow and/or green are fine)
2 eggs
1/4 cup flour or any other flour
1/2 cup grated mozzarella cheese
pinches of your favorite herbs (basil, marjoram, thyme, rosemary)
1/2 cup grated parmesan cheese
2 T. olive oil

Topping suggestions;
*sliced tomatoes
*extra cheese
*sliced garlic
*sauteed mushrooms
*pepperoni
*thinly sliced meat of your choice (pastrami, roast beef, hamburg,etc.)
*sauerkraut
*carmelized onions
*roasted red peppers
*use other cheeses to mix things up (swiss, pastrami, sauerkraut can make a nice Reuben pizza! With thousand island dressing drizzled on top before serving!)
*pineapple, ham, with teriyaki sauce drizzled on top
*anchovies
*your kitchen sink (:)

Directions

Oil a 10 inch pie pan and coat lightly with flour. Preheat oven to 400 degrees.

Combine zucchini, eggs, flour, cheeses, herbs and 1 T. olive oil in a bowl and mix well.

Spread into prepared pan and bake for 35-40 minutes or until golden brown. Halfway through the baking, brush with the remaining olive oil. remove from oven. When cooled, use a spatula to loosen the crust from the pan so it won't break later!~

Top with your favorite items and bake at 400 degrees until heated through.
