1 bunch fresh asparagus, ends removed, cut into thirds
2 onions - sliced
1/2 small container cherry tomatoes quartered or halved - depending on size
1 cup Rice Wine vinegar
1 tsp. tarragon
1 tsp. minced garlic
1/2 tsp. sugar or sugar substitute
1/4 tsp. fresh cracked black pepper
1/8 tsp. salt - optional
Combine all ingredients and refrigerate. Alllow to chill at least 30 minutes before serving.
