Summer Onion, Cherry Tomato and Asparagus Salad

TOTAL TIME: Prep: 20 min. Cook: 30 min. YIELD: 4 servings
This makes a great side dish in the heat of summer. It's cool and refreshing and pars well with almost meal. It's a great variation from a typical garden salad.

Ingredients

1 bunch fresh asparagus, ends removed, cut into thirds
2 onions - sliced
1/2 small container cherry tomatoes quartered or halved - depending on size
1 cup Rice Wine vinegar
1 tsp. tarragon
1 tsp. minced garlic
1/2 tsp. sugar or sugar substitute
1/4 tsp. fresh cracked black pepper
1/8 tsp. salt - optional

Directions

Combine all ingredients and refrigerate. Alllow to chill at least 30 minutes before serving.
