Summer Onion, Cherry Tomato and Asparagus Salad Recipe

This makes a great side dish in the heat of summer. It's cool and refreshing and pars well with almost meal. It's a great variation from a typical garden salad.

Ingredients

  • 1 bunch fresh asparagus, ends removed, cut into thirds
  • 2 onions - sliced
  • 1/2 small container cherry tomatoes quartered or halved - depending on size
  • 1 cup Rice Wine vinegar
  • 1 tsp. tarragon
  • 1 tsp. minced garlic
  • 1/2 tsp. sugar or sugar substitute
  • 1/4 tsp. fresh cracked black pepper
  • 1/8 tsp. salt - optional

Directions

Combine all ingredients and refrigerate. Alllow to chill at least 30 minutes before serving. Yield: serves 4
Notes: The longer the vegetables marinate, the better the flavor.
