¾ cup all purpose flour
½ cup whole wheat flour
1 tsp baking power
1 tsp baking soda
pinch of salt
1 egg, beaten
1 ¼ cup milk
2 Tbsp butter, melted
¼ cup sugar
½ tsp to 1 tsp almond extract
heaping ¼ cup frozen raspberries
heaping ¼ cup frozen blueberries
Stir together the flours, baking power and soda, and salt. In another bowl, stir together the egg, milk, butter, sugar, and almond extract. Add to the flour mixture and stir only until smooth. Pour onto a greased griddle heated to medium heat and drop in the berries. Flip after bubbles are visible throughout the pancake, about three minutes. Cook through on the other side.
