Shrimp Po Boys with Pineapple Broccoli Slaw

TOTAL TIME: Prep: 20 min. Cook: 15 min. YIELD: 4 servings
Shrimp is a really health protein and finding new ways to prepare it is always a challenge. This is a great twist on the traditional po boy that adds flavor and grains while reducing fat and calories.

Ingredients

1/2 cup eggbeaters
1 1/2 pounds large shrimp, peeled & deveined
1/2 cup panko breadcrumbs
1/4 tsp cayenne (you can add more if you prefer spicy foods)
2 tbsp. Old Bay or other creole seasoning
1 tomato - sliced
4 tbsp. reduced fat or fat free tartar sauce
4 multi grain baguettes - lightly toasted

Pineapple Broccoli Slaw
1 bag broccoli slaw
1 cup no sugar added pineapple tidbits - drained reserve liquid
1/4 cup chopped green onions
1/2 cup light mayo

Directions

Dip shrimp in Eggbeaters
Blend Panko, cayenne and old Bay seasoning
Dredge shrimp in the seasoned panko
Place on a baking tray and bake at 400 until shrimp are pink; keep warm
While shrimp are baking, prepare slaw by first whisking mayo and reserve pineapple juice, then incorporating remaining slaw ingredients
Spread each baguette with 1 tbsp. tartar sauce
Divide shrimp and sliced tomato between baguettes
Top with Pineapple Broccoli Slaw
