3 cups all purpose flour
1 cup sugar
2 tbls. baking powder
1 box instant pistachio pudding
2 eggs beaten
1 1/4 cups milk
1/2 tsp almond extact
3/4 cups vegetable oil
mix flour,sugar,baking powder and pudding mix. combine eggs,milk,and oil and add to dry ingredients and mix until just moistened. fill baking cups full. bake 20 to 25 minutes in a preheated 375-degree oven or until muffin test done.
