Papas con Carne Picada

I used to make this recipe for my four children when I came home from work and was tired and needed to put dinner on the table in a hurry. They loved it and now that they are grown they make it themselves.

Ingredients

1 lb ground beef

4 medium size white potatoes peeled and cut up in ¼” squares

1 8oz can tomato sauce

1 tbsp olive oil

1 tsp salt

½ tsp black pepper

½ tsp garlic powder

½ small onion thinly sliced (optional)

2 cups water

12 warmed up flour tortillas

Directions:

In large 10” skillet brown ground beef and drain all excess fat. Add salt, pepper, garlic, olive oil and add the cut up potatoes. Mix into the ground beef, oil and all ingredients. Add the tomato sauce and mix together. Add 2 cups of water and bring to a boil and add the sliced onions on top. Once it comes to a full boil turn down to a low heat continue to cook until potatoes are soft. Serve with warmed up flour tortillas.
