This is an old Christmas sweet bread (almost a cake) recipe that I learned from my late Czech mother-in-law. It is made with all egg whites, with just a little flour, sugar and lots of yummy flavors inside. The beauty of this bread/cake is that though it tastes wonderful cooled from the oven, it actually tastes even better as it ages. Like many European recipes, the ingredients are measured in grams rather than cups. I hope you have a kitchen scale.

Ingredients

7 egg whites
140 g (5 oz) granulated sugar
140 g (5 oz) Wondra flour (see notes)
125 g (4.5 oz) butter, melted
100 g (3.5 oz) bitter-sweet cooking chocolate, chopped into chip size (see notes)
100 g (3.5 oz) nuts, chopped (filberts best, but walnuts or pecans are also good)
lemon zest from one lemon

Directions

Preheat the oven to 350 F.

Beat the egg whites until stiff. Mix in the sugar, then alternately fold in the Wondra flour and melted butter. Add the coarsely chopped chocolate, nuts, and lemon peel.

Pour batter into a greased and floured long loaf pan (use all-purpose flour to flour the pan). Or use 2 regular loaf pans. Bake for about 30 mins or until a toothpick comes out clean.
