Curried Cream of Cauliflower Soup

I made this soup up for a class and had rave reviews from everyone.


4 ounces onion
2ounces celery
2 ounces carrots
5 ounces cauliflower
2 ounces flour
2 ounces butter
2 cups heavy cream
2 cups chicken stock
1/8 tsp cardamom
1/4 tsp turmeric
1 tsp curry
1 tsp chili powder
salt & pepper TT


In a pot, melt the butter and add the celery and carrots. sauté for three minutes, add the cauliflower and onion and sauté for an additional 3 minutes.
Add the flour while stirring to create a roux. slowly incorporate the chicken stock and heavy cream. Add the spices and simmer for an additional 20 minutes.
