Chopped Kale Salad

This recipe sold me on raw kale!
Large Bunch Kale, about 14 cups with stems removed
1/4 cup currants
1/2 cup raw shelled pumpkin seeds
1/4 cup grated Parmeson or Manchego cheese (optional)
Juice of 1 Lemon
3 tbs Olive Oil (or to taste)
Salt, to taste
Fill your food processor with the kale leaves, in batches if necessary. Pulse until the kale is pretty finely chopped (or until desired consistency). Transfer to a medium bowl. Put the pumpkin seeds in the processor and pulse until finely chopped. Add those to the kale, along with the currants and cheese. Toss to combine. Add the juice of one lemon, the olive oil, salt. Stir. Serve immediately or store in the refrigerator.
