Chipotle-Ranch Tilapia Bundles Recipe

While on my recent journey in losing over 100 pounds, I depended on flavorful, healthy recipes the entire family would enjoy. This one completely fit the bill!

Ingredients

  • 4 tilapia filets
  • 10 fingerling potatoes halved and PARBOILED
  • 20 asparagus spears
  • 8 slices of red onion or vidalia (your taste preference)
  • 20 cherry or grape tomatoes
  • 1/2 cup reduced fat ranch dressing
  • 1/2 large diced chipotle pepper + 1/4 tsp. additional chipotle sauce (if you like more on the spicy side) ***Chipotle pepper and sauce amounts can be adjusted according to taste as this is a spicy ingredient***
  • salt & pepper to taste

Directions

1. Prepare four sheet of parchment paper approx. 12x12 - 12x14 in size
2. Lightly salt & pepper the tilapia and place in center of parchment
3. Combine ranch dressing, chipotle pepper and sauce
4. Top tilapia with sauce
5. Top fish with potatoes, onions, asparagus and tomatoes
6. Bake at 400 for approximatley 20-30 minutes or until fish is done throughout and asparagus is crisp tender. Yield: serves 4
Notes: This is a really super quick recipe that has tons of flavor, a complete meal in one packet and makes clean up a breeze! *** Parboiling the potatoes is necessary to ensure they are cooked throughout as the fish and veggies do not require as long to bake. ***
