Chicken Biscuit Sandwich

My best friend and I always go to a local restaurant just to have their biscuit sandwich. This sandwich is inspired by what we ALWAYS get on Sundays waiting in a long line to have this delicious chicken sandwich that is good for Breakfast, Lunch, OR dinner! Yum!

Ingredients

For the Biscuit:

2 cups all-purpose flour
1/4 teaspoon baking soda
1 Tbs baking powder
3/4 cup buttermilk
1 teaspoon salt
6 Tbs shortening

Panko Chicken:

1 boneless skinless chicken breast (butterflied, pounded to 1/2 in thickness)
1/2 c flour
1/2 c panko bread crumbs
2 lrg eggs
salt and pepper to taste
2 TBSP olive oil or vegetable oil

Sausage Gravy:

12 oz ground sausage, cooked, drained
4 TBSP butter
1/4 c flour
3 c whole milk or heavy cream
2 tsp hot sauce
salt and pepper to taste

Additional ingredients (optional but wonderful on this):

4 slices thick cut, cooked bacon
1 slice Tillamook sharp cheddar cheese
1 fried egg

Directions

For the biscuits:

Stir all dry ingredients together in a large bowl. Cut in the shortening with a pastry cutter until a coarse crumbly texture forms. Add buttermilk and knead gently. The dough should be soft but not sticky: if it is, add a little more flour. Knead for 1 minute, wrap in wax or parchment paper and refrigerate for at least 20 minutes.

Preheat the oven to 450 degrees.

Roll out the dough 1/2 inch thick on a lightly floured surface and cut with a biscuit cutter or a medium size drinking glass.
Transfer biscuits to a dark baking sheet and bake until golden brown, 10-12 minutes.

For the chicken:

Heat oil in medium size skillet on low/med. heat.
Using 3 seperate bowls, in the first bowl add the flour, second bowl, have the egg (with salt/pepper to add flavor) and the third bowl panko crumbs. Dip the chicken in the flour first, then egg, then panko and fry for 4-5 min on each side until cooked all the way through and crispy.

Sausage Gravy:

Heat large saucepan with butter until melted. Add flour, and stir until smooth. Reduce heat to medium, and cook until light brown. Gradually whisk in milk, and cook until thickened. Season with hot sauce, salt and pepper, and stir in cooked sausage. Reduce heat, and simmer for 12 to 15 minutes.

ASSEMBLY:

Cut open one of your hot biscuits, and assemble your sandwich first with the bacon, then egg, cheese, and finally the panko chicken. Ladle a moderate portion of gravy onto a plate and serve the biscuit sandwich on top.
