Cheesy Potato Soup

TOTAL TIME: Prep: 55 min. Cook: 30 min. YIELD: 10 servings
It is my family's favorite soup.

Ingredients

2 stalks celery
1 medium onion, chopped
2 Tbsp. butter
8 medium potatoes, peeled & cubed
3 carrots, sliced
3 cups water
5 chicken bouillion cubes
3/4 tsp. seasoned salt
1/2 tsp. parsley flakes
1/4 tsp garlic powder
dash of pepper
2 cups milk
8 oz. colby cheese, shredded

Directions

Saute celery & onion in butter in large pan until tender. Add potatoes, carrots, water, bouillion cubes and seasonings. Bring to a boil, cover and simmer for 20 minutes. Remove from heat & mash vegetables coarsely with a potato masher. Add milk & cheese. Heat until cheese is melted. Makes 10 cups
