It is my family's favorite soup.

Ingredients

  • 2 stalks celery
  • 1 medium onion, chopped
  • 2 Tbsp. butter
  • 8 medium potatoes, peeled & cubed
  • 3 carrots, sliced
  • 3 cups water
  • 5 chicken bouillion cubes
  • 3/4 tsp. seasoned salt
  • 1/2 tsp. parsley flakes
  • 1/4 tsp garlic powder
  • dash of pepper
  • 2 cups milk
  • 8 oz. colby cheese, shredded

Directions

Saute celery & onion in butter in large pan until tender. Add potatoes, carrots, water, bouillion cubes and seasonings. Bring to a boil, cover and simmer for 20 minutes. Remove from heat & mash vegetables coarsely with a potato masher. Add milk & cheese. Heat until cheese is melted. Makes 10 cups Yield: serves 10
