Candy Orange Slice Cake

It was made by my mother-in-law every Christmas and now I try to continue the tradition since she has died.

Ingredients

4 EGGS
2 CUPS SUGAR
1 CUP BUTTER, SOFTENED
2 CUPS FLAKED COCONUT
1/2 POUND DATES, CHOPPED
2 CUPS CHOPPED NUTMEATS
1 POUND CANDY ORANGE SLICES, CUT EACH INTO 4 OR 8 PCS.
1/2 TEASPOON SALT
3 1/2 CUPS FLOUR
1/2 CUP BUTTERMILK
1 TEASPOON BAKING SODA
1 CUP LIQUID ORANGE JUICE CONCENTRATE
2 CUPS POWDERED SUGAR

Directions

Preheat oven to 300 degrees F. Mix eggs, sugar, and butter. Combine orange slices, dates, nutmeats, and coconut with 1/2 cup of the flour, tossing to coat all pieces in another bowl. Combine remaining 3 cups of the flour and salt in another bowl. Mix together the buttermilk and baking soda with the egg mixture. Next, combine butter mixture with the dry ingredients. Add candy and fruit mixture. Pour into 2 greased and floured loaf pans or 1 angel food pan. Bake loaf pans 1 hour and 45 minutes; angel food pan 2 hours. Immediately after baking, combine orange juice and powdered sugar; pour glaze over cake while still warm and in the pans. Let stand overnight on a counter before removing from the pans. ENJOY!!!
