Baked Apple Cider Salted Caramel Apples

Ingredients
6 apples, cored and hollowed
(inside of apples grated and seeds & core removed)
6 Tbsp. brown sugar
6 tbsp. golden raisins
1 packet cinnamon apple or cinnamon brown sugar oatmeal
3 tbsp. cinnamon
1 tbsp. Nutmeg
3 tbsp. good vanilla
1 stick butter
2 cups apple cider
1/2 cup salted caramel topping
1/4 cup crushed walnuts * optional
Directions
Mix all ingredients in a medium bowl except apple shells, butter, apple cider and salted caramel. Place apple shells in a baking pan. Stuff each shell with the mixture. Pour apple cider over the top of the stuffed apples. Add a pat of butter to the top of each apple. Bake at 375 for about 45 minutes or until apples are crisp/tender. Top with a scoop of vanilla bean ice cream, drizzle with the salted caramel and top with crushed walnuts if desired. Serve warm.
