I've loved baked apples since I was a child. My mama used to bake batches of these after we would spend a fall day picking apples.

Ingredients

  • 6 apples, cored and hollowed
  • (inside of apples grated and seeds & core removed)
  • 6 Tbsp. brown sugar
  • 6 tbsp. golden raisins
  • 1 packet cinnamon apple or cinnamon brown sugar oatmeal
  • 3 tbsp. cinnamon
  • 1 tbsp. Nutmeg
  • 3 tbsp. good vanilla
  • 1 stick butter
  • 2 cups apple cider
  • 1/2 cup salted caramel topping
  • 1/4 cup crushed walnuts * optional

Directions

Mix all ingredients in a medium bowl except apple shells, butter, apple cider and salted caramel. Place apple shells in a baking pan. Stuff each shell with the mixture. Pour apple cider over the top of the stuffed apples. Add a pat of butter to the top of each apple. Bake at 375 for about 45 minutes or until apples are crisp/tender. Top with a scoop of vanilla bean ice cream, drizzle with the salted caramel and top with crushed walnuts if desired. Serve warm. Yield: serves 6
Notes: These same ingredients can be used as an apple crisp by dicing the apples, mixing with other ingredients, topping with the oatmeal and drizzling the butter. You can also alter this recipe to make Pumpkin Spice Baked Apples by substituting the Salted Caramel topping for a Pumpkin Spice Syrup. It's a very versatile recipe that can easily accommodate multiple flavors.
