CokeCola Cake

We live in Coca-Cola country, where everyone loves a chocolaty, moist sheet cake made with the iconic soft drink. Our rich version does the tradition proud. —Heidi Jobe, Carrollton, Georgia
  • Total Time
Prep: 25 min. Bake: 25 min.
  • Makes
    15 servings

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 can (12 ounces) cola
  • 1 cup butter, cubed
  • 1/4 cup baking cocoa
  • 2 large eggs, room temperature
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • GLAZE:
  • 1 can (12 ounces) cola
  • 1/2 cup butter, cubed
  • 1/4 cup baking cocoa
  • 4 cups confectioners' sugar, sifted

  • Preheat oven to 350°. Grease a 13x9-in. baking pan.
  • In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened.
  • In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly.
  • Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean.
  • About 15 minutes before cake is done, prepare glaze. In a small saucepan, bring cola to a boil; cook 12-15 minutes or until liquid is reduced to 1/2 cup. Stir in butter and cocoa until butter is melted; remove from heat. Add confectioners' sugar; stir until smooth. Pour immediately over hot cake.

Test Kitchen tips
  • Try using root beer, Dr Pepper or cherry cola.
  • Sifting the confectioners' sugar helps keep the frosting smooth and lump-free.

Do not make this cake, ruined 17th birthday for my son. I think recipe is wrong, followed to letter and its a wet mess. What a waste of money, i truly hope you read reviews before making and someone take this recipe off website.

I’ve made this twice and have perfected the recipe and now it looks exactly like the photo above. The first time the icing was too runny. The second time I used 8 oz of Coke for the cake and 8 oz for the icing. And I sifted the powdered sugar. If you decrease the amount of Coke and make sure you sift the powdered sugar you will have a gorgeous, delicious Coke Cake!

I made it exactly as written, except I did not include cinnamon. My coke boiled down to a little less than a half cup so I added a Tablespoon of Coke. It turned out perfectly.

For all the problems the angry people had ... listen closely! The Coca Cola has to be boiled down to a syrup and exactly 1/2 cup( not rocket science just takes a little patience) this recipe if followed as directed is an amazing cake and it is supposed to be a little moist and if you don’t follow the directions or try to hurry and make this quick it’s NOT going to turn out correctly! Not the recipe or the person who submitted the recipes fault.. it yours so stop blaming people for your mistakes and impatience... jeez you act like it’s a horrible thing that your recipe didn’t turn out the way YOU expected... ok let it go! Lol - I’ve been making this recipe for years and it’s an amazing recipe and an amazing cake! If you don’t like cinnamon leave it out .. but as in any recipe when baking measure all of the ingredients and follow the recipe... and it turns out great! All the others quit your whining and go buy something from your local store and smile.... lighten up !! It’s only a cake??

Delicious and moist, probably one of the best coke cakes I've made. However, the glaze looks nothing like the recipe photo above. It's very thin. It also ran down the sides of the cake and puddled under the cake in the pan. I hesitate to add more confectioners' sugar so maybe next time I'll use less cola in the glaze. My family really enjoyed the cake and I will definitely make it again.

Delicious and moist cake. I used classic coke for cake and icing. Next time I make it, will probably use a different icing that stands up a little better.
