Can you use skinless salmon fillets to make cilantro lime salmon?
If you prefer skinless salmon fillets, you can definitely make cilantro lime salmon with those. However, skin-on fillets work great for this recipe because it creates a barrier between the salmon meat and the bottom of the dish. That way, if the salmon sticks to the bottom of the dish, it's the skin that sticks—and not the meat.What can you serve with cilantro lime salmon?
If you've still got some extra cilantro to use up after making the cilantro lime salmon, put it to use in cilantro lime rice! You only need 2 more tablespoons to make it, and rice is a perfect complement to the salmon. Otherwise, some roasted veggies or a leafy side salad should do the trick, too.

Ingredients
- 1-1/2 pounds salmon fillets
- 1/4 cup lime juice, divided
- 1/2 cup minced fresh cilantro
- 3 tablespoons thinly sliced green onions
- 1 tablespoon finely chopped jalapeno pepper
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Optional: Lime wedges, sliced jalapenos and cilantro sprigs
Directions
- Preheat oven to 350°. Place salmon skin side down in a 13x9-in. baking dish coated with cooking spray. Drizzle with 1-1/2 teaspoons lime juice.
- In a small bowl, combine the cilantro, onions, jalapeno, oil, salt, pepper and remaining lime juice. Spread over salmon. Bake, uncovered, until fish just begins to flake easily with a fork, 20-25 minutes. If desired, serve with lime wedges, jalapenos and cilantro sprigs.
