Cilantro-Avocado Tuna Salad Sandwiches

Lime juice and cilantro in tuna salad – who knew? This recipe for avocado tuna salad came to me as a way to have a protein-packed meal with lots of pizzazz. —Heather Waldorf, Black Mountain, North Carolina

Ingredients

  • 2 pouches (5 ounces each) albacore white tuna in water
  • 1/3 cup mayonnaise
  • 3 tablespoons minced fresh cilantro
  • 2 tablespoons lime juice
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 slices whole wheat bread, toasted if desired
  • 4 slices Muenster or provolone cheese
  • 1 medium ripe avocado, peeled and sliced

Directions

  • In a small bowl, mix the first 7 ingredients. Spread tuna mixture over 4 slices of bread; top with cheese, avocado and remaining bread. Serve immediately.

  • Avocado is high in monounsaturated fat, a so-called “good fat” that can lower your blood cholesterol along with the risk of stroke and heart disease. Each fruit also contains about 9 grams of healthy fiber.
  • If you grow cilantro, you can also harvest its seeds, known as coriander. Let the seeds mature from green to brown, then cut heads with a few inches of stem and hang to dry. Gently loosen the seeds and store in a covered jar.

      Very nice change. D Just Nice change! Only had the stronger, regular tuna in water, so I found myself doubling up on the cilantro. Didn't bother with cheese or avocado, and it was very good.

      We loved this recipe! Great lime and cilantro fans! Used nonfat Iyogurt instead of mayo. Fit into our dieting plan.

      LOVED the flavors in this tuna salad! We are huge fans of lime & cilantro - just never thought about it with tuna! Our new favorite way to eat it! We served it with some crackers instead of bread.
