- 8 cups chopped peeled tart apples (about 3-1/2 pounds)
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 2 teaspoons vanilla extract
- In a Dutch oven, combine apples, brown sugar and cinnamon. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla. Mash apples slightly if desired. Serve warm or cold. Yield: about 3-1/2 cups.

"I haven't used store-bought applesauce in years. We have a Gravenstein tree in our front yard; when that's not in season, I use Honey Crisp or Granny Smith--we like it fairly tart. Love the vanilla, and I also throw in a pat of butter and a bit of apple juice (makes it smoother) and a teaspoon or so of apple brandy or apple schnapps. But I've never tried brown sugar, only white sugar, and will definitely do so next batch."
